Our vines are also protected according to their needs and against unforeseen weather. This is the guarantee of a sound and preserved environment.

Champagne is delicate and therefore tricky to make.
It requires knowledge passed down from father to son to give it its personality while preserving the spirit of Maison Loriot Père & Fils.

The magic of champagne craftingA long and delicate process

It all starts in September, when the harvest is done manually in order to preserve the integrity of the grape berries.

The grapes are slowly pressed immediately after the harvest so as to collect the precious juice. It then ferments for 7 to 10 days in a vat, enough time for the organoleptic flavours to be expressed in the future wines.

After clarification, the resulting 'vins clairs' are ready for blending. This stage brings the whole family together to give each cuvée its own personality.

Then begins the process of vinification. It needs to stay in the cellar for at least 15 months, sometimes up to several years.

It is at the time of bottling that the yeasts and some sugar are added. They are necessary to the second fermentation which will result in the formation of the bubbles.

Protected from light and at a constant temperature, the bottles remain in the cellars for a slow 'ageing' period while awaiting the disgorging stage.

This last step makes the wine crystal-clear. It is also the time when its style is defined - nature, brut or demi-sec - by adding the 'liqueur de dosage'. The cork and muselet are finally placed to seal the bottles.

They will then age from 3 to 10 years as far as the most prestigious cuvées are concerned. This time is necessary for Champagne Loriot Père & Fils to enhance its flavours and give your taste buds a thrill.
